Protein Mug Cake... AKA YUMMMM

Love this mug cake recipe! This definitely has to be one of my favorite recipes so far, not only because of how decadent it tastes but also how quick and easy the recipe is. I tweak the recipe a little every time that I make it and it always changes the consistency just a little. I usually stand by the microwave to watch the timer  (it only takes a minute) and.... Voila! You have a single size cup of chocolate lava goodness!  Try out the basic recipe & change it to your liking. The texture and microwave time will change anytime you adjust the baking soda/powder, amount of dry or wet ingredients, etc.

Directions:
1. Get out a coffee mug, spray with nonstick cooking spray of choice (I usually keep olive oil spray around)
2. Mix dry ingredients : 1 scoop of chocolate protein powder (Whey or Casein is best), 1 tbsp cocoa powder (Hershey's dark cocoa powder is my favorite), sweetener substitute to taste, 1/4 tsp baking soda, 1/8 tsp baking powder, pinch of salt.
3. Add in dry ingredients: 1 egg white, 2 tbsp of unsweetened almond milk. (you can also try subbing some of the milk with coffee that will intensify the chocolaty-ness).
4. Mix well with a fork until you have gotten rid of most of the lumps And microwave for 45 seconds to 1 minute. Depending on your microwave you may need to pause the cooker to keep it from overflowing and push the cake down and heat for a little longer.



If it is a little mushy-gooey... no worries! You can leave it in the microwave to set for just a minute after it is finished cooking, do not overheat the mug cake- the gooey soft texture is what makes it SO good (at least in my opinion!).

This little dessert is great for post workout, before bed, breakfast and so on! Just see where it fits into your diet or schedule. Also, if you really want a decadent dessert---- after you have mixed everything up in your mug, drop a tablespoon of natural peanut butter on top before placing it in the microwave. Do not mix the peanut butter in, it will sink to the middle of your mug and melt in the center of the cake! I have also tried adding a bit of sugar free rasberry/strawberry preserves/jelly in place of the peanut butter. Possibilities are endless, you can eat it straight from the mug or flip it into a little bowl--- ENJOY!
